rework repository tree

The repository tree needs rework regarding correctness, and stronger emphasis on the three stages Working Tree, Index, History.

Since the repository is only the .git directory, the Subtree root has to be renamed Repository -> Projekt. The Snapshots is and was a way to put Emphasis on the fact that git stores Snapshots which should be part of the presentation but could at most live in a annotion as of now.
